Hard lighting would be something like direct flash, not bounced in any way and giving very dense (Black) shadows and if you are not careful burnt-out highlights. Soft on the other hand would be something like bounced flash, using an umbrela for example or a big softbox, the contrast here would not be as high.
Just think of the difference in lightng between direct sunlight (hard) and the lighting on an overcast day (soft).
