| How do you freeze a cake without it getting freezerburn? I am decorating a wedding cake in two weeks and want to bake it the day before. I want to freeze it, then ice it the next day but I am afraid that it will taste weird. If I wrap it in saran wrap will it be okay in the freezer? |

| def wrap it in something and put it in freezer, ittl be fine, just think, the air cant directly hit or burn cake but its temp will keep it frozen and thaw it out day b4 and ice it and it will taste like day of, i know, my friend did it b4 and i worked fine, tasted good too. good luck hope this helped |

| That should work. But maybe try a layer of wax paper, and then the saran wrap over it. Sometimes, saran wrap leaves a fake, plastic-y flavor on your foods.Even if you decide not to do the wax paper, you should not have a problem w/ freezer burn the way you described it. |

| As everyone said, wrapping it is the most important thing so it doesn't dry out. But doing it the day before doesn't allow you time to defrost it. How about two days before, otherwise, bake it the day before and wrap it well, but don't freeze it. You don't want to icing it, and have a beautiful cake, and then find it hasn't thawed at the wedding. Use your judgment on the time line, but freezing it is fine, and wrapping it in saran wrap and/or freezer wrap is OK. Good luck. |

| I've made many many wedding cakes and done just that. I usually left them in the pans and wrapped the saran wrap over the pans. |

| hi there, I had to freeze my friends wedding cake about year ago in the freezer and the bakery lady told me what to do, and everything turned out fine.The cake should be loosely wrapped in plastic wrap several times and placed into a cake box. The cake box should also be wrapped in plastic wrap, and then placed in freezer. This will preserve the taste and texture of the cake.A word of caution: never keep the wedding cake in a frost-free freezer, because the constant defrosting will draw the moisture out of the cake. If you are moving within the year, leave the cake with a family member or friend’s freezer after the wedding to avoid moving the cake before your anniversary. When you are prepared to eat your cake on your anniversary, remove the cake from the freezer and thaw in the refrigerator for 48 hours, then place at room temperature for 2 to 3 hours. Your cake will be as beautiful (and tasty) as the day of your wedding! |
