| This is the easiest cake in the world to make and it tastes much better than ones with animal bits in. It doesn't keep forever like 'traditional' fruit cake - just make it one or two days before you need it. Ingredients1½ lb (675g) mixed sultanas, currants, raisins¼ pint veg oil12 oz (350g) 100% wholemeal self-raising flour1 tbsp (15ml) molassesGrated rind of 1 lemon¾ pint (450ml) water2 tsp (10ml) ground mixed spice3oz (75g) raw brown sugar3 tbsp (45ml) sherry MethodGrease and line a 7½ inch (19cm) round cake tin.Place all the ingredients, except the sherry, in a basin and beat well until evenly mixed. Pour into a tin and bake at 150C for about 2 hours, until risen and firm to the touch.Allow to cool slightly in the tin then spoon the sherry over the cake and leave in the tin til completely cold. How easy is that! |

| Try to find a baker who has experience in making vegan cakes. A wedding cake is something very special and i wouldn't bother with making it on my own.Ask at your local health shop if they know anyone who could do that for you. :)You can also write to a vegan bakery that caters for all occations.bakery@veganmania.com |

| i've used this recipe for years whenever i had to make cakes for birthdays, parties, etc. it's the best vegan cake i've ever had!Vegan friendly “birthday” cake 350 degrees3 c cake flour (softasilk)1 ¾ c sugar1 ¼ c water½ c vegetable shortening2 ½ t baking powder1 t salt1 ½ t vanilla extract3 T water, 3 T oil, 2 t baking powder (mixed together separately as an egg replacement)Grease and flour a rectangular cake pan. Combine all ingredients with electric mixer. Bake 40-45 minutes. |
