May 5th is the final critique day in my Photography class this semester, and we are in the habit of regularly bringing some kind of snack or treat to share with the class. I have a really great basic muffin recipe, so I am thinking of baking some, but I don't know what kind! Any ideas?It is a morning class (9-1130), so I thought something breakfast/ brunch-y would be good . . . maybe something with nuts or cereal, or fruit (fitting for the spring season)? I have had the most success with an apple-pear-pecan combination, but that seems more appropriate to the autumn season I usually make them in, rather than spring.Thanks for any suggestions y'all might have-- Smile

How about blueberries? Can't go wrong with that one. If you want to be creative...maybe a lemon muffin with dried cranberries?

I think that you should make banana muffins, or cranberry, or blueberry muffins!! Those always taste so delicous. Also, you can make apple pie, or cranberry pie, or miny tarts. I think you should definitely have fruit fillings, those will be delicious!! Why don't you ask the class what they like? Good luck!

Rasberry with almonds and white chocolate chips r amazing and remind me of spring! Just dont put too much chocolate!

Pecan-Apple TorteServes 61 cup pecan halves ½ Cup flour 2 teaspoons baking powder ¼ teaspoon salt 2 large cooking apples (or one apple and one pear)3 eggs 1-cup sugar 1-teaspoon vanilla extract ¾ Cup whipping cream Method 1 …Preheat the oven to 325°F. Line 2 9-inch cake pans with wax paper and grease. Spread the pecans on a baking sheet and bake for 10 minutes. 2 …Finely chop the pecans. Reserve 1-½ tablespoons and place the rest in a mixing bowl. Sift over the flour, baking powder, and salt and stir. 3 ...Quarter, core, and peel the apples. Cut into 1/8-inch dice, then stir into the pecan, flour mixture. 4 ...With an electric mixer, beat the eggs until frothy. Gradually add the sugar and vanilla and beat until a ribbon forms, about 8 minutes. Gently fold in the flour mixture. 5 …Pour into the pans and level the tops. Bake until a cake tester inserted in the centre comes out clean, about 35 minutes. Let stand 10 minutes. 6 …To loosen, run a knife around the inside edge of each pan. Let cool. 7 ...Whip the cream until firm. Spread half over the cake. Top with the second cake . Pipe whipped cream rosettes on top and sprinkle over the reserved pecans before serving

You mentioned pecans/nuts or cereal - just watch the tree nut/peanut allergies. Scary how many kids are developing the allergies these days.Perhaps fruit and bagels with cream cheese. My kids love both in the morning.Good luck!
