1. I'd nix the Cheese Ball (because cheese balls look kinda gross when they're consumed) and the spinach dip (because it's better warm for a formal event as spinach and artichoke dip... but that may just be me, since we have spinach dip at every holiday celebration...)2. Bacon wrapped scallops (assuming they look good... sometimes buffet scallops can get REALLY dry) otherwise Mini Crab Balls (because they're exotic and seafood, which makes them sound expensive, too. But don't do crap and scallops.) Cocktail Franks in bourbon sauce (because they're different), Mini Quiche (assuming they can be presented fresh, and don't look like the things you get out of the freezer section at your grocery store.)3. Gotta have a vegetarian option, even if you don't think there are vegetarians at your wedding. So Veggie Lasagne is in. Of the beef options, I'd choose Prime Rib over Top Round. I'd choose the crab cakes over the cod, so long as you're sure that they're good. Of the rest? SOME people may prefer a chicken dish to another red meat dish, especially since your fish dishes aren't particularly healthy. So I'd go with the healthiest chicken dish, probably the Cranberry chicken (depending upon what the marinade the Marinated chicken is in).4. Asparagus or Broccoli (depending upon how they're cooked. Poorly cooked asparagus is nasty.), Rice (to match the fish), Au Gratins (gotta have something with heft to go with the beef), Fettucine (because people like pasta!) (Yes, I know I have 4, but I think you need the rice to have a starch to go with the dantier dishes, unless the chicken can "hold up" to the pasta, and then I'd choose the pasta.
