Get the chocolate "coin" candies with gold foil wrappers to put in the goblets. Kind of like a Leprechaun's pot of gold? Hopefully that's not too cheesy, just trying to incorporate your Irish heritage. For my sister's wedding, which was outdoor ceremony/indoor reception, we found some lovely silver containers and planted grass for the centerpieces. We made sure to trim the grass before the wedding (obviously) and they made very simple and chic looking centerpieces. Perhaps you could get clover seed to plant. Depending on when the wedding is, it didn't take long for the grass seed to grow (only 2-3 weeks) and I know that clover grows almost as quickly. You could even attach a little note saying something about looking for a lucky 4-leaf clover. It would be something to keep your guests occupied.
