I'm making a wedding cake and it has 3 tiers. The bottom is red velvet and the top two are carrot cake. I can't be there on the day of the wedding, and have to make the cake 3 days in advance. I'm torn between how to send the cake to the wedding. Should I put wooden dowels in and send it in one piece or not put supports in and tell them just to stack them at the wedding? HELP!

I think you should put the dowels in, but go ahead and let someone stack it at the reception. I know that wasn't one of the options you mentioned, but I'm concerned that the carrot cake is heavier than the red velvet... so at least dowels separating the bottom layer from the next layer up.Good luck!

Well without an actual drawing of the design of the cake I cannot help much but here goes.1 Seperate pieces is the only way to assure the cake gets thier in one piece.2.The selected cake types them selves have a high weight in water volume for wedding cake and yet are not able to to hold as much a denser traditional wedding white cake. My suggestion would be to construct a dowel system to support the weights and the patforms for each cake so no cake is taking the weight of another. 3 make a test cake or 2 to see what you can resonably do with the flat plastic structural sheets they put wedding cakes on.4 Don't let the frosting dry on the final cake, assembly will mean your going to need to bring from fresh frosting with you just in case and wet goes best on wet so ater your done with the cake make sure to cover each layer well.5 good luck
