This might not help you much, but I recently watched on wedding SOS where a pregnant bride had to have her dress let out and they could not let it out enough for her. They were able to add something in the back so the dress would lace up instead of zipping and added some extra fabric beneath that to hide her bare back. Then she was able to lace the dress as tight or as loose as she needed to be in her current size. Whereever you ordered the dress might be able to do this for you, or provide you with the extra material that you could use to have it altered somewhere else. I would think that it should be fairly simple if you are a seamstress.

Get a picture of the dress (name and style) and go to another dress shop. Talk to the seamstress and explain the problem. You can always alter a dress. You may just need to order some extra fabric from the dress company. (Did the dress come with a shawl? is she short and needs like a foot taken off of the bottom for hemming? all of that is extra fabric) Fabric won't take 8 weeks to arrive. My mother had extra fabric ordered for her dress and they made her a jacket out of it. Maybe another seamstress can help you before you go and buy another dress that may or may not make it in time for your wedding. If they can do it take the dresses with you and don't look back. If that doesn't work you are going to have to go to David's bridal and find something off of the rack. I would not order through the dress shop you are at. 1 week is not enough time to ensure that the dress will be there on time or be able to be altered in time.
